Kids Cook: Chef Helena's Party Sprinkle Cookies

  • NO Bake Granola Breakfast Balls

Here are the tools that you will need to have on hand to be ready to cook with Chef Helena:

  • Cookie sheets 2 per recipe
  • Measuring cups
  • Measuring spoons
  • Hand held mixer or kitchen aid
  • 3 large metal bowls
  • Parchment paper

First wash your hands for 20 seconds. Second measure everything out and place into bowl. Chef Helena will have everything measured out and will be ready to go at 11:30 AM.

Chef Helena's Party Sprinkle Cookies

Ingredients:

  • 1 1/2 cups all purpose flour
  • 2 teaspoon baking powder
  • ¼ salt
  • ½ cup butter soften to room temp
  • ¾ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ¾ cup sprinkles
Instructions:
  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder and salt. Set aside.
  3. Using a hand mixer or stand mixer, beat butter until smooth. Cream in sugar, until light and fluffy. Add egg, vanilla extract, mixing until combined and scraping the sides of the bowl as needed. Add in flour mixture and mix until just combined. Add 1/2 cup sprinkles and stir by hand until combined.
  4. Scoop a heaping tablespoon of dough and roll into a ball (or use a 1 1/2 tablespoon scoop). Place 1/4 cup sprinkles on a plate and press the tops of the dough balls in additional sprinkles (optional). Place dough balls onto prepared baking sheet leaving about an inch for spreading.
  5. Bake for 8-10 minutes. The edges should be completely set, and the centers should look slightly under cooked, they will finish cooking while cooling on the baking sheet.
  6. Place the baking sheets on wire racks to cool. Repeat with remaining dough once the baking sheets are completely cool.

Prep Time: 30 Minutes

Cook time: 10 Minutes

Chef Helena's NO Bake Granola Breakfast Balls

Ingredients:

  • 2 cups rolled oats
  • ½ cup shredded coconut
  • ½ cup peanut butter
  • ½ cup honey or maple syrup
  • 1 teaspoon any extract e.g.: vanilla, almond, maple
  • ¼ cup brown sugar
  • ¼ cup any nuts toasted e.g.: peanuts, almond
  • ¼ cup raisins and/or crasins or dried blueberries
  • ¼ cup toasted sesame seeds
Instructions:
  1. Heat oven to 350 or toast in a frying pan
  2. Toast oats and coconut until light golden
  3. Place in a pot peanut butter, honey, extract and brown sugar, melt
  4. In a large bowl place toasted oats and coconut, melted mixture and everything else
  5. Cool until you can handle it
  6. On a parchment lined baking sheet drop large spoonful and roll into balls
  7. Chill until firm
  8. A tasty treat on the go!! Chemical free and full of fibre and energy

Prep Time: 30 Minutes

Cook time: 5 Minutes

Chef Helena's Puff Pastry Eccel Cookies

Ingredients:

  • 2 sheet puff pastry, rolled out
  • Lots of white sugar
  • Raisins
  • Parchment paper
Instructions:
  1. Heat oven to 400
  2. Place a layer of sugar on your cutting board
  3. Place one sheet of puff pastry on top of the sugar, sprinkle with raisins and place another sheet on top, top with more sugar
  4. Roll the sheets in the sugar until the raisins just start to pop out
  5. Cut into any shape you want, I do squares
  6. Place on a parchment lined jelly roll pan or baking sheet
  7. Bake until you can see the bottom start to brown, flip and bake the other side
  8. Place on a cooling rack ton cool, they keep along time

Prep Time: 30 Minutes

Cook time: 10 Minutes

 

Chef Helena’s Pad Thai: Kids Cook

This recipe serves 4 people & it should take you about 20 minutes to prepare. Serve with fresh fruit and a ginger ale for a great dinner .

Here are the tools that you will need to have on hand to be ready to cook with Chef Helena:

  • A cutting board with a wet towel under it
  • Sharp chef knife…if you are not allowed to use a knife, get a grownup to help you
  • 1 bowl for your noodles
  • 1 larger frying pan
  • 1 Tongs
  • 1 wooden spoon
  • 1 Whisk
  • 2 tasting forks
  • Bowls to put all your ingredients in
  • 4 dinner plates

First wash your hands for 20 seconds. Second measure everything out and place into bowl. Chef Helena will have everything measured out and will be ready to go at 11:30 AM.

Chef Helena’s Pad Thai with Chicken or Shrimp

Ingredients:

  • 1/2 lb (220 g) dried wide rice noodles
  • For Sauce:
    • 8 tbsp. (75 ml) tamarind paste
    • 4 tbsp. (30 ml) fish sauce
    • 2 tbsp. (15 ml) fresh lime juice
    • 6 tbsp. (45 ml) finely grated palm sugar or brown sugar, more to taste
    • 2 tbsp. (30 ml) Ketchup
    • ½ cup chicken broth
    • Optional Chili sauce to taste, garlic chili great
  • For Chicken or Shrimp:
    • 1/4 cup (60 ml) vegetable oil
    • 1 cup chopped chicken or 8 large shrimp (10/12 count), peeled and deveined
    • ½ cup sliced onions
    • 2 tsp (10 ml) chopped garlic
    • 2 large eggs
    • 1 cup (250 ml) fresh bean sprouts
    • 4 tbsp. (60 ml) garlic chives, cut into 1-inch or green onion (2.5 cm) lengths
    • 8 oz. (110 g) medium-firm tofu (about 1/2 cup/125 ml), cut into small pieces
  • Garnish:
    • Bean sprouts
    • Fresh sprigs of cilantro
    • Lime wedges
    • 1/4 cup roasted nuts, finely chopped
Instructions:
  1. Soak noodles in warm water until soft and pliable, then drain
  2. In a bowl, mix together the tamarind paste, fish sauce, lime juice, palm sugar, ketchup & broth.
  3. This is your sauce.
  4. In oil, fry chicken or prawns until no longer pink
  5. Then add onions until tender, then add in garlic, crack in egg and stir to mix, add in bean sprouts, green onions and tofu.
  6. Add in sauce and cook 2 minutes, then garnish with Bean sprouts, cilantro, lime wedges and nuts

Chef Helena's Corn Fritters with Creamy Herb Dip: Kids Cook

This recipe serves 4 people & it should take you about 20 minutes to prepare. You can serve this recipe with a crispy green salad or as an appetizer.

Here are the tools that you will need to have on hand to be ready to cook with Chef Helena:

  • A cutting board with a wet towel under it

  • A cookie sheet with a cooling rack on top
  • 2 metals bowls
  • 2 whisks
  • 1 non stick frying pan
  • 2 tasting spoons
  • Measuring cup & Measuring spoons
  • Bowls to put all your ingredients in
  • 4 dinner plates plus 4 dipping bowls
  • 2 wooden spoons, flat sided are best

First wash your hands for 20 seconds. Second measure everything out and place into bowl. Chef Helena will have everything measured out and will be ready to go at 11:30 AM.

Chef Helena’s Corn Fritters with Creamy Herb Dip

Ingredients:

  • Corn Fritters:
    • 2 eggs
    • ½ cup flour or rice flour
    • 1 tablespoon sugar
    • 1 tablespoon baking powder
    • Salt and pepper
    • Milk to thin or water if needed
    • Corn off of 4 cobs
    • oil
  • Creamy Dip
    • 2 Tablespoons Yogurt
    • 2 Tablespoons sour cream
    • Rice wine vinegar or lemon juice
    • 4 Tablespoons mayo
    • 4 Tablespoons whip cream, cremo or milk
    • Salt and pepper to taste
    • 1-3 teaspoons of fresh or dried herbs of your choice
Instructions:
  1. For Corn Fritters:
    1. In a medium bowl, eggs, flour, sugar, baking powder, salt and pepper, fold in corn
    2. In the frying pan add oil enough to cover the bottom of the pan and heat until 350 degrees
    3. Drop fritters in the hot oil, about ¼ cup mixture for each fritter, and flatten them a bit.
    4. Cook the fritters until golden brown
  2. Creamy Dip
    1. Mix Everything and Serve

Chef Helena’s Roasted Vegetable Tart: Kids Cook

This recipe serves 4 people & it should take you about 40 minutes to prepare. You can serve this recipe with a crispy green salad or some fresh fruit

Here are the tools that you will need to have on hand to be ready to cook with Chef Helena:

  • Chef knife…if you are not allowed to use a knife, get someone to help you
  • 2 Large bowls
  • Parchment lined baking sheet
  • Rolling pin
  • 1 measuring cup
  • A BBQ or grill

First wash your hands for 20 seconds. Second measure everything out and place into bowl. Chef Helena will have everything measured out and will be ready to go at 11:30 AM.

Chef Helena’s Roasted Vegetable Tart

Ingredients:

  • 2 cups flour
  • 2/3 cup butter
  • 1 teaspoon salt
  • Up to 12 tablespoon cold water
  • 4 c seasoned grilled veg., eggplant, zucchini, mushrooms, peppers or any filling
  • Optional: 1 cup caramelized onions
  • Optional: ½ cup of any cheese you like
Instructions:
  1. Preheat oven to 400.
  2. In a bowl mix the salt and flour.
  3. Cube the cold butter and place into the flour.
  4. Use your fingers to squeeze the butter into the flour. While you are squeezing the butter with your thumb squeeze and push the butter away from you this will make the butter into thin shards.
  5. Add water to form a ball.
  6. Roll out dough and place onto parchment paper.
  7. Place filling in the middle and watch as Chef Helena shows you how to fold the pastry. Bake until golden brown. Serve hot, warm to cold.

Cook time: 20 Minutes
