Grapefruit Honey Sabyon

Ingredients:

  • 1/2 cup Grapefruit Juice
  • 1 tbsp Honey
  • 1 tbsp White Sugar
  • 3 egg yolks
  • Chopped mint, for garnish

Instructions:

  • Begin by creating a double boiler and having it set to low. In a mixing bowl, combine all the ingredients and whisk well.
  • Place the mixing bowl atop the simmering water and whisk continuously for 8 to 10 minutes or until the sabayon has become thick, smooth and doubled in volume. Remove from heat and serve atop your favourite fruit, cake or even French toast.

Yields to: 1 cup
