Roasted Asparagus Wrapped in Prosciutto

This appetizer is great any time, but since asparagus is in season and delicious right now, we suggest you break this recipe out for an Easter party or as an appetizer for a bigger meal.

Roasted Asparagus Wrapped in Prosciutto with Goat Cheese & Basil Dipping Sauce

This appetizer can be scaled up to serve as many people as you need - simply buy more or less asparagus and prosciutto to match your needs!

Ingredients:

  • Asparagus
  • Very thinly sliced Prosciutto
  • 1/2 cup Spreadable Goat Cheese
  • 3-4 leaves of Fresh Basil
  • Balsamic Vinegar
  • 1/4 cup Whipping Cream
  • Well Seasoned Olive Oil *
  • Salt & pepper to taste
    • *Available from Well Seasoned

Instructions:

  1. Use either fresh or frozen asparagus. If you are using fresh, blanche and transfer to an ice bath to cool. If you are using frozen, thaw them in cold water. Drain and pat dry.
  2. Wrap each stalk of asparagus with one thin slice of prosciutto and roast in a 400 degree oven about 15 minutes until golden brown.
  3. Goat Cheese Dip Instructions:In a medium sized bowl, combine 1/2 cup goat cheese, 3-4 leaves of freshly chopped basil, a splash of balsamic vinegar, 1/4 cup whipping cream & salt and pepper to taste.
  4. Remove roasted asparagus from the oven - arrange on a platter and drizzle with a good quality extra virgin olive oil. Serve with the goat cheese dip on the side.
