Gently salt the sablefish fillets, rest for 5 minutes. In a medium sized bowl whisk flour, baking powder and beer, rest for 5 minutes in the freezer.
Heat your oil to 350F.
Dust the sable fillets with flour and shake off excess. Dip in batter and carefully put in hot oil.
Fry around 4-5 minutes, or until golden brown and the fish is cooked. transfer to a wire rack. In another bowl mix mayonnaise, pickles, garlic, shallots and hot sauce. Correct seasoning. Serve with crispy fish.
