Corn Fritters

It's the simple things sometimes that are so delicious. Like these peak of summer corn fritters, just try and resist them!
Fresh Corn Fritters

Ingredients:
- 4 fresh cobs of corn, blanched in salted water for 3 minutes, cool & remove kernels from cob
- 2 whole eggs, beaten
- 1 cup all-purpose flour
- 2 tbsp. fresh cilantro, chopped (optional)
- 1 tsp baking powder
- sea salt and fresh black pepper
- Combine all ingredients in a bowl. Then generously coat a frying pan placed over medium-high heat with vegetable oil.
- With a tablespoon, scoop some of the mixture into the pan, like a small pancake.
- Cook on both sides until golden brown.
- Remove and serve immediately drizzled with fresh, local honey.
