Garlic. Spinach. Cherry Tomatoes! Can you smell it? Let’s cook these aromatic flavours together and add a package of Aurora Tortelloni to make Creamy Garlic Tortelloni with Spinach & Cherry Tomatoes.
This recipe is super flexible: you can swap spinach for arugula, add cooked chicken or bacon, or toss in some roasted mushrooms for extra flavour.

- 1 package of Aurora tortelloni*
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- ½ cup heavy cream (or half-and-half)
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
- Optional: pinch of red pepper flakes for heat
*Available from Well Seasoned
1 Cook the tortelloni according to package instructions until al dente. Drain, reserving ½ cup of pasta water.
2 Sauté the veggies in olive oil over medium heat. Add garlic and sauté 1 minute Add cherry tomatoes and cook 2–3 minutes until slightly softened.
3 Add spinach and cook until wilted (~2mins)
4 Reduce heat to low and stir in cream. Simmer for 1–2 minutes, then add Parmesan cheese, salt, and pepper. If needed, thin sauce with splash of reserved pasta water.
5 Combine pasta, veggies, and sauce. Heat through for 1–2 minutes.
6 Plate immediately and top with extra Parmesan or fresh herbs if desired.
