This sweet and elegant snack combines the creamy tang of goat cheese with the floral honey and lavender notes of spring. The Bitarome Lavender Extract is the perfect addition to these sweet truffles
- 1 log (approx. 140g) Goat Cheese
- 2 tbsp Honey*
- 1 drop Bitarome Lavender extract*
- ½ cup crushed Bulk Pistachios

1. Place the goat cheese in a medium mixing bowl and let it soften slightly at room temperature for 5 minutes.
2. Add the honey to the bowl.
3. Add one drop of Lavender extract.
4. Mix the ingredients with a spatula until the honey and lavender are fully incorporated and the mixture is smooth.
5. Scoop out approximately 1 tablespoon of the mixture at a time and roll between your palms to form 1-inch balls.
6. Place the crushed pistachios in a shallow dish.
7. Roll each cheese ball in the pistachios until the exterior is completely coated.
8. Arrange the truffles on a chilled plate or parchment-lined tray.
9. Chill in the refrigerator for at least 10 minutes to firm up before serving.
