The perogy cart at the fair has nothing on this recipe! These pan-fried Veronica's Perogies are topped with caramelized onions, crispy bacon, dollops of spiced sour cream, and hot chili drizzle.
Well Seasoned Products:
- 1 pkg (approx. 12–16 oz) Veronica’s Gourmet Perogies*
- 2 tbsp All Fat Beef Tallow*
- 1 large yellow onion, thinly sliced
- 4 strips bacon, chopped
-½ cup Well Seasoned Old School Onion Dip* (or sour cream)
*Available from Well Seasoned
1–2 tbsp Japanese Chili Oil or Umami Bomb Shiitake Chili Oil
1. Crisp the Bacon:
Add chopped bacon to a skillet over medium heat. Fry until golden and crispy (about 5–7 minutes). Transfer bacon with a slotted spoon to a paper towel-lined plate, leaving the rendered fat in the skillet.
2. Caramelize the Onion:
Add the sliced onion to the bacon fat in the skillet. Cook over medium-low heat, stirring occasionally, until deeply golden brown and soft (12–15 minutes). Transfer onions to a bowl and set aside.
3. Pan-Fry the Perogies:
Melt 2 tablespoons of beef tallow in the same skillet over medium heat. Add perogies in a single layer and cook for 3–4 minutes per side until deeply golden and crispy.
4. Assemble & Serve:
Plate the crispy perogies. Top generously with caramelized onions, crisp bacon, dollops of onion dip, and a heavy drizzle of chili oil. Serve hot.
