These Mediterranean Turkey Burgers offer a delicious twist on a classic, incorporating fresh herbs, sun-dried tomatoes, and a secret ingredient for extra moisture.

- 1 lb ground turkey thigh (or ground turkey breast, with an added egg for binding)
- 2-3 cloves fresh garlic, minced
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup mixed fresh herbs, chopped (parsley, oregano, dill, mint)
- 1/2 medium onion, grated (for moisture)
- Salt and freshly ground black pepper, to taste
- Burger buns, toasted
- Tzatziki, for serving (homemade preferred)
- Shredded lettuce, for serving
- Fresh tomato slices, for serving
- Crumbled feta cheese, for serving
1.) Prepare the Turkey Mixture: In a large bowl, combine the ground turkey, minced garlic, chopped sun-dried tomatoes, and fresh chopped herbs.
2) Add Grated Onion and Seasoning: Grate the onion using a box grater and add it to the turkey mixture. The grated onion will add significant moisture to the burgers. Season generously with salt and freshly ground black pepper.
3.) Form Patties: Mix all ingredients thoroughly by hand until well combined. Form the mixture into patties of your desired size. You can prepare these ahead of time and refrigerate until ready to grill.
4.) Preheat Grill: Preheat your grill to high heat (around 500°F/260°C). Ensure the grill grates are clean to prevent sticking.
5.) Grill Burgers: Once the grill is hot, turn the heat down to medium-high (375-400°F/190-205°C). Place the turkey burgers on the grill. Cook until they have a good crust and reach an internal temperature of 165°F (74°C) using a digital meat thermometer.
6.) Assemble Burgers: Once cooked, remove the burgers from the grill. Do not add feta cheese to the grill as it will melt and disappear.
7.) Serve: Spread tzatziki on toasted burger buns. Layer with shredded lettuce, fresh tomato slices, the cooked turkey burger, and a generous sprinkle of crumbled feta cheese. Serve immediately.
