Wondering what to do with all of that leftover ham from your Easter dinner. This creamy casserole is the perfect way to re-purpose your holiday leftovers.
Potato & Ham Parmesan Bake
The perfect way to re-purpose your holiday leftovers!
Ingredients:
4 medium russet potatoes, sliced very thin
¾ cup diced cooked ham
½ cup leftover cooked broccoli (you can subsititute any leftover vegetable)
¼ cup diced red onions
½ cup whole milk
1/3 cup freshly grated Parmesan cheese
¼ cup freshly grated Parmesan cheese for the top
2 ½ tablespoons butter, divided
salt and pepper
fresh basil
Instructions:
Pre-heat oven to 400° & grease 8" x 6" baking dish with 1 tablespoon butter.
In a small bowl mix together milk and Parmesan cheese, set aside.
Clean and slice potatoes, towel dry before placing in baking dish.
Layer about 1/3 of the sliced potatoes on the bottom of the baking dish,sprinkle with salt and pepper, drizzle with 1/3 of the milk mixture and top with ½ the diced ham, repeat layer, the last layer add remaining potato slices, milk mixture, sprinkle with last ¼ c. of Parmesan cheese and dot with remaining butter.
Bake for approximately 30 minutes or until fork tender.
Increase the temperature to broil and bake for another few minutes to brown the top.
Garnish with fresh basil, allow it to rest for 5 minutes & serve.
