That's why we love the addition of Capirette 20-Year Sherry Vinegar in this classic pear and walnut mixed green salad.

- 2 tbsp Capirette 20-Year Sherry Vinegar*
- 4½ tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- ¼ tsp kosher salt
- ¼ tsp black pepper
- 4 cups mixed greens
- 1 ripe pear, thinly sliced
- 60 g Manchego cheese, shaved
- 2 tbsp toasted walnuts

1. Whisk vinegar, olive oil, Dijon, salt, and pepper until emulsified.
2. Toss greens and pear with vinaigrette.
3. Top with Manchego and walnuts. Serve immediately.
