These delicious salmon bites are coated in Scheep Dust (a fabulous, multi-purpose spice mix made in Langley BC) and are dripping with homemade sweet honey sriracha glaze.
- Salmon (as little or as much as you want)
- Scheep Dust Multi Purpose Spice Mix*
Honey Sriracha Glaze:
- 2 Tbsp Honey
- 1 Tbsp Soy sauce
- 1.5 Tbsp Sriracha
* Available from Well Seasoned
1. Cut Salmon into bite-sized pieces and coat generously with Scheep Dust (available from Well Seasoned)
2. Place on cooling rack (on a cookie sheet) to promote good air circulation. Place in fridge for at least 4 hours (overnight is better)
3. Fire up your smoker and dial in the temperature to 200-225 degrees.
4. Place salmon in smoker and smoke for 60 minutes.
5. Flip salmon pieces then smoke for another 60 minutes.
6. Mix all glaze ingredients to combine. Brush with honey sriracha glaze. Smoke for another 30 minutes.
7. Flip and brush with more honey sriracha glaze. Smoke for another 30 minutes.
8. Remove from smoker garnish with sesame seeds and sliced scallion
