- 8 slices bacon
- 2 cups baby potatoes, diced small (about ½ inch pieces)
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 small onion, thinly sliced
- 2 tbsp olive oil or melted butter
- 1½ tbsp Prairie Smoke & Spice Rubs - Maple Candy (or yoru favourite smoky rub)
- Salt and pepper, to taste
- Optional: chopped green onion or parsley for finishing
1. Pre-cook potatoes slightly at home if you want faster camping cook time (optional but helpful).
2. Divide potatoes and onion evenly between 4 large sheets of heavy-duty foil.
3. Drizzle with olive oil or butter and sprinkle with smoky maple seasoning, salt, and pepper. Toss lightly.
4. Top each pack with 2 slices of bacon, laid over the potato mixture.
5. Seal foil packs tightly, leaving a little steam space inside.
6. Cook over campfire coals or grill for 20–25 minutes, flipping halfway.
7. Carefully open packs (steam will be hot), crack 1 egg into each pack, and sprinkle cheese on top.
8. Re-seal loosely and cook another 5–7 minutes until eggs are set to your liking.
9. Finish with green onions or herbs before serving.
