Skewered BBQ prawns are a great option for those who want a lighter summer fare. This recipe marinates them in our popular Ban Chok Dee Curry Sauce for elevated flavour!
Yield: 4-6 Servings
Prep time: 20 mins (+ marinating)
Cook time: 6 mins
- 1 lb Jumbo Tiger or Spot Prawns (peeled and deveined, tail on)
- 1 red bell pepper, cut into 1-inch chunks
- 1/2 red onion, cut into petals
- Fresh cilantro and lime wedges for garnish
- 1 container of Ban Chok Dee Thai Cuisine Curry Sauce*
- 1 pack EMF Housewares Bamboo Skewers (soaked in water for 30 mins)*
*Available from Well Seasoned
1. Marinate: In a large bowl, toss the prawns with half the container of Ban Chok Dee Curry Sauce. Let marinate in the fridge for at least 30 minutes (but no longer than 2 hours).
2. Skewer: Thread the prawns onto the soaked bamboo skewers, alternating with pieces of red pepper and onion.
3. Grill: Preheat grill to medium-high. Lightly oil the grates. Grill the skewers for 2–3 minutes per side until the prawns are pink and opaque.
4.Glaze: Bring the remaining Curry Sauce to a simmer and use as a finishing sauce over the prawns.
5.Serve: Arrange on a platter, garnish with plenty of cilantro and a squeeze of fresh lime.
