There's something absolutely delicious about sautéed mushrooms and Swiss cheese on a freshly grilled burger. Add spice with the depth of your favourite Okazu Spicy Chili oil.
Yield: 4 Burgers
Prep time: 15 minutes
Cook time: 12 minutes
- 1.5 lbs ground chuck (80/20 lean-to-fat ratio)
- 2 cups cremini mushrooms, sliced
- 2 tbsp unsalted butter
- 4 brioche buns
- 1 cup arugula
- 4 slices Swiss or Gruyère cheese
- 2 tsp Truffle Salt*
- 2 tbsp Abokichi Okazu Japanese Chili Oil*
- Black pepper to taste
*Available from Well Seasoned
1. Sauté Mushrooms: In a pan over medium-high heat, melt butter. Add mushrooms and sauté until golden brown and moisture has evaporated (about 8 minutes). Season with a very generous pinch of Truffle Salt. Set aside.
2. Form Patties: Gently divide the beef into 4 patties. Season both sides generously with the remaining Truffle Salt and black pepper. Do not overwork the meat.
3. Grill: Preheat grill to high. Grill patties for 4–5 minutes per side. In the last minute of cooking, add a slice of cheese to each patty and toast the buns.
4. Assemble: Spread a generous teaspoon of Abokichi Okazu Chili Oil on the bottom bun. Top with the patty, a heap of truffled mushrooms, and a handful of arugula.
