  • Haida Gwaii Coho Salmon Tartare with Shiso, Dark Miso, Rhubarb, Fried Shallots, Grilled Sourdough, Seasonal Herbs, Cucumber, Capers and Preserved Citrus
  • Fraser Valley Chicken Souvlaki, Roasted Pepper Agrodolce, Herby Summer Potato Salad with Citrus and Fine Olive oil
