Chocolate Mousse With Ricotta And Lemon

  • 2 cups Ricotta
  • 45mL sugar
  • 5mL salt
  • 1 lemon, zested
  • 100mL semi sweet chocolate, melted
  • 30mL dark chocolate chunk
  • 5mL nutmeg


  • Put the ricotta in a fine mesh sieve, cover with parchment and put a weight on it to press out the excess moister.
  • Transfer the ricotta in a food processor and blitz until smooth.
  • Add sugar, salt and melted chocolate and purée until uniform and slightly airy.
  • Transfer in a bowl, cover with plastic wrap and chill in the fridge for 30 minutes.
  • Scoop in two chilled bowl, garnish with grated chocolate and nutmeg.

Prep Time: 40 minutes (includes chilling time)

Yield: 2 servings
