Chocolate Mousse With Ricotta And Lemon

Ingredients:

2 cups Ricotta
45mL sugar
5mL salt
1 lemon, zested
100mL semi sweet chocolate, melted
30mL dark chocolate chunk
5mL nutmeg

Instructions:

Put the ricotta in a fine mesh sieve, cover with parchment and put a weight on it to press out the excess moister.
Transfer the ricotta in a food processor and blitz until smooth.
Add sugar, salt and melted chocolate and purée until uniform and slightly airy.
Transfer in a bowl, cover with plastic wrap and chill in the fridge for 30 minutes.
Scoop in two chilled bowl, garnish with grated chocolate and nutmeg.
