Great Bear Scallops: Marinated Scallops W/Daikon, Chiles, Nuoc Cham

Yields: 2 portions.

Ingredients:

• 4 large (u-10/12) fresh Great Bear Scallops, shucked and cleaned
• 15 ml cilantro leaves
• 5 ml grated ginger
• 15 ml fish sauce
• 1/2 lime, juice
• 3 ml sugar
• 5 ml jalapeño, minced
• 1 garlic clove, minced
• 1/4 cup of daikon radish, sliced thinly on a mandolin

Instructions:

1. Slice scallops in half horizontally and lightly season with salt. In a bowl, mix fish sauce, sugar, lime, jalapeño, ginger, garlic and whisk until well combined. Transfer everything in a small bowl and marinade for 10 minutes. arrange on a serving plate and garnish with cilantro leaves.

Thai Noodle Salad with Chef Craig

Ingredients for dressing:

• Zest of 1 Orange, ½ Orange juiced
• 1 tsp Dijon Mustard
• 2 tsp Soy Sauce
• 1 tbsp Sesame Oil
• 2 tbsp Rice Wine Vinegar
• 1 tbsp Sesame Seeds
• 1 tbsp Fresh Cilantro
• 1 tsp fresh grated ginger (or more)
• ½ tsp sambal chili paste

Ingredients for Salad:

• ½ pkg of Rice Noodle, cooked to package instructions
• 6 Fresh Mint Leaves, torn
• ¼ cup Fresh Cilantro, chopped, loose packed
• ½ cup Green Onions, chopped
• ½ cup fresh snow or snap peas, chopped
• ½ cup Kale, chopped
• ½ cup Red Cabbage, chopped
• ¼ Jalapeño, chopped
• 1 can Mandarin Oranges
• ¼ cup nuts (peanuts or cashews), chopped
• *Available from Well Seasoned

1. For Salad: Mix all together to combine.
2. For Dressing: Toss all ingredients, add dressing, toss again. Serve with seared tuna.
3. For Seared Tuna: Season the tuna generously with salt and pepper. Heat a pan over medium-high heat with 2 tablespoons of oil. Place tuna in the hot oil and sear for 1 minute on each side.

Taco Fiesta: Raw Onion Slaw With Mustard And Chilies

Yields: 2 portions.

Ingredients:

• 1/2 small white onion, thinly sliced on a mandolin
• 1/2 small red onion, sliced
• 5 stalk chives, cut into 1’’ batons
• 3 green onion, sliced into rounds
• 1 small shallot, sliced rounds
• 30 mL red wine vinegar*
• 30 mL grainy dijon mustard*
• 30 mL Well Seasoned olive oil*
• *Available from Well Seasoned

Instructions:

1. Put all the onions, except white onion into a large bowl, sprinkle a pinch of kosher salt, wilt for 5 minutes. Add the vinegar, marinade another 5 minutes. Mix in mustard, olive oil and fold in the unseasoned white onions for texture and depth.

Taco Fiesta: The Ultimate Guacamole

Yields: 2 portions.

Ingredients:

• 3 large and ripe avocados
• 1/4 bunch of cilantro, chopped
• 3 cloves of garlic, puréed
• 2 limes, juiced*
• 10 ripe cherry tomatoes, quartered
• Chili flakes, to taste*
• *Available from Well Seasoned

Instructions:

1. In a large bowl combine garlic, tomatoes, cilantro, chili flakes with a large pinch of salt. Marinate 5-10 minutes.
2. In another bowl, peel and seed avocado and scoop. use a fork to mash it down without mixing too much. Season lightly with salt.
3. Drain ONLY the juice from tomatoes on top of the avocado. Mix very gently to preserve texture.
4. Transfer into a bowl, make a well in the middle and fill it up with marinated tomatoes.

Taco Fiesta: Charred Pineapple With Chipotle Crema

Yields: 2 portions.

Ingredients:

• 1/2 ripe pineapple, core removed and cut into 4 wedges
• 15 ml chipotle in adobo, puréed
• 1 lime, juiced*
• 10 ml ground coriander*
• 100 ml sour cream, or thick yoghurt
• *Available from Well Seasoned

Instructions:

1. Either in the hot oven or on the hottest side of your grill, season the pineapple with coriander and char until it is nicely caramelized, around 5 minutes, not more to preserve the freshness and texture. Meanwhile, mix the cream, lime juice and chipotle. Lay down the crema as a base layer. Slice the pineapple and serve on top the chipotle mix.

Taco Fiesta: Tomatillo Salsa With Cumin And Cilantro

Yields: 2 portions.

Ingredients:

• 3 medium sized tomatillos
• 1 small white onion, halved
• 3 cloves of garlic
• 30 ml cumin, coarsely ground*
• 1 bunch cilantro, chopped fine
• Chili flakes, to taste
• *Available from Well Seasoned

Instructions:

1. Heat you oven to 450F, or your grill to high. Cut 2 tomatillos and the onion in half. Heat up a heavy bottomed pan, or the grill, and and caramelized the onion and the tomatillos and transfer in the oven for 10 minutes, or until soft.
2. In the meanwhile purée the garlic and shave the last tomatillo very thinly on a mandolin. Transfer the frilled tomatillo, onion, garlic, cumin, chili flakes and half the cilantro in to a kitchen processor and purée until smooth. Correct seasoning, fold in the rest of the raw tomatillo and the cilantro.
