Best Ever Turkey Burgers

Just 15 days to go until Canadian Thanksgiving (October 12th), and while a traditional dinner completed with a stuffed turkey may be your usual game (get it?), we know that some of you are planning for a smaller gathering this year. And you don't have to toss out the bird altogether - keep it local, but order some ground Turkey! Add a side of sweet potato fries and you've got a feast!

Juicy burger tip: Blend this recipe well, but try not to work the mixture too long. This makes for a more juicy and tender burger!

Best Ever Turkey Burgers

Ingredients:

  • 1 1/2 lbs ground Turkey
  • 1 large Egg
  • 1/3 Bread Crumbs
  • 1/4 cup finely minced Sweet Onion
  • 1/4 cup of Mrs. Bridge's Ploughman Chutney, or your favourite brand of Chutney.
  • 1/2 tsp. ground Cumin
  • salt and pepper to taste

Instructions:

  1. Mix all ingredients together in a large bowl.
  2. Form mixture into 1/2 inch patties (makes appropriately 7 depending on size).
  3. Cook on a medium-high grill for approx. 5 minutes each side, or until thoroughly cooked.
  4. Serve on a toasted bun and add your favourite toppings.

Thanksgiving Slaw With Cabbage, Apple And Bitter Leaves

Yields to 4

Ingredients:

  • 1/4 head of white cabbage, thinly sliced
  • 1/4 head of re cabbage, thinly sliced
  • 2 granny smith apples
  • 40ml fresh ginger, sliced into thin matchsticks
  • 1/2 bunch cilantro, cleaned
  • 3 spring onions, sliced thick
  • 1 Belgian endive, cut into1/6’’ slices lengthwise
  • 1/2 large carrot shaved into thin rounds
  • 8 red radishes, cut into half moon shapes
  • 30ml maple syrup
  • 50ml rice wine vinegar
  • 20ml fish sauce
  • 2 cloves garlic
  • 1 lime juice
  • Black sesame seeds

Instructions:

  1. Put all the vegetables in a large mixing bowl and season with salt very gently and marinade for 5 minutes.
  2. In another bowl whisk in maple syrup, rice vinegar, lime juice and fish sauce until combined. Add to the vegetables, toss well and marinade for another 5 minutes.
  3. Toss well to combine and garnish with sesame seeds, serve.

Roasted Wild Fall Mushrooms With Cheese Curds Sherry And Lavender

Yields to 4

Ingredients:

  • 2 lbs wild mushrooms such as, chanterelles, pine, cauliflower and porcini, or cultivated favourite variety if wild is not available.
  • 3 cloves garlic, puréed
  • 75 ml butter
  • 3 shallots, fine diced
  • 20ml french lavender flowers
  • 40ml sherry vinegar
  • 50ml port
  • 50ml heavy cream
  • 5 sprigs of thyme
  • 2 large sprigs of rosemary
  • 200ml cheese curds
  • 30ml parsley, chopped coarse

Instructions:

  1. Preheat your oven to 425F. Clean the mushroom very gently using a mushroom or a soft toothbrush from excess dirt. In a large frying pan sauté the mushrooms with a generous pinch of salt in olive oil. When mushroom starts to colour lightly after 3 minutes, drop in the butter, shallots, garlic, thyme, rosemary and lavender flowers.
  2. Glaze the pan with vinegar and cook it off, add protein wine and reduce by half. Add the cream and bring up to a boil. In an oven safe serving dish arrange the mushrooms and top up with cheese curds. Bake in the oven for 5 minutes or the curds are soft and squeaky. Sprinkle with parsley, optionally drizzle with white truffle oil and serve.

Roasted Delicata Squash With Walnuts, Goat’s Cheese And Tahini

Yields to 4

Ingredients:

  • 2 delicata squash, or any favourite variety, cut in half, seeds scraped
  • 50ml melted butter
  • 30ml maple syrup
  • 4 sage leaves
  • 100ml fresh goat’s cheese
  • 50ml walnuts, roasted and coarsely chopped
  • 50ml tahini
  • 3 stalks of chives, thinly sliced

Instructions:

  1. Preheat your oven to 425F. In a large skillet brown the butter with sage leaves. Season the squash flesh with maple syrup and sprinkle with salt. Roast until tender, depending on the variety of squash. Whip the goat’s cheese in a food processor until smooth and airy.
  2. Stuff the squash halves with goat’s cheese, sprinkle with walnuts and drizzle with tahini.
  3. Garnish with chives and crispy sage leaves, serve warm.

     

    Prep Time: 10 Minutes

    It's FINALLY here! For those who can't get enough, we're sharing our Pumpkin Spice Blend that you can use in anything and everything. For those who are just looking for a few (or daily) Pumpkin Spice Lattes to celebrate the season, check out our PSL recipe below.

    Pumpkin Spice Blend

    All spices are available at Well Seasoned - fresh is always better. Come see us in store!

    Ingredients:

    • 4 tsp ground cinnamon*
    • 2 tsp ground ginger*
    • 1 tsp ground cloves*
    • 1/2 tsp ground nutmeg*
    • 1 tsp ground all spice*
      • *Available from Well Seasoned

    Instructions:

    1. Blend + Enjoy.

    Prep Time:

    2-5 Minutes

     

    Pumpkin Spice Latte

    Ingredients:

    • 1 c. coconut milk*
    • 1 tbsp pumpkin puree
    • 1 tsp maple syrup*
    • 1/2 tsp pumpkin spice*
    • 2 shots espresso*

    Instructions:

    1. Mix the spice mix into the hot coffee to completely dissolve. Blend in the rest of the ingredients and serve immediately.

    Smoke Show Hummus

    What better for a sunny Sunday after a week of smoke and grey than an excuse to whip up some dip to take out to the patio and soak in the last days of late summer? Pick up a bottle of this Canadian made delight in store today, and then serve up the kind of smoke everyone can enjoy. You can also order a bottle of Smoke Show Hot Sauce from us online!

    Smoke Show Hummus

    There are lots of tips floating around for how to make the perfect hummus; from preserving a little of your chickpea liquid for a stronger taste (mix it into your water and olive oil solution) to only using the very best quality Extra Virgin Olive Oil (which, of course, we always recommend), but we think the absolute best way to elevate your hummus game is to add some heat.

    Ingredients:

    • 2 charred Jalapeño Peppers
    • 1 can of Chickpeas
    • 2 cloves of Garlic
    • ¼ cup of Tahini
    • The juice from 1 Lemon
    • 1 pinch of Salt and Pepper
    • 1 tsp. Sumac
    • 3 tbsp. Smoke Show Hot Sauce
    • 1 tsp. Smoked Paprika
    • Well Seasoned Olive Oil
    • Water
    • 2 tbsp. Zaahtar
      • *Available from Well Seasoned

    Instructions:

    1. Start the grill and char your jalapeños and lemons and garlic.
    2. Drain and rinse your can of chickpeas.
    3. Using a food processor, blend the chickpeas and the garlic just slightly.
    4. Add the lemon juice, tahini, Smoke Show, spices, and a splash of olive oil. Then blend.
    5. While it’s blending, gradually add water and olive oil to obtain your ideal consistency. VERY SLOWLY add these ingredients, until perfectly soft and fluffy.
    6. Serve with crudités like sliced radishes, carrots, fennel, celery, tortilla chips, etc.
