This delicious Thai soup is sure to warm you to your core - packed with flavour, with some added heat!

Ingredients:

• 70g Tom Yam Paste (1 sachet)
• 8-10 prawns, peeled and deveined
• 1 chicken stock cube
• 2 pieces of shallots, minced
• 1 stem of lemongrass, minced
• 100g of mushrooms, quartered
• 1 tbsp of lime juice
• Handful of fresh coriander

Method:

• Boil 500mL of water in a big saucepan. Add 1 chicken stock cube when the water is boiling. Stir until the cube has dissolved in the boiling water. Next, add the lemongrass and the shallots
• Stir the Tom Yam paste into the boiling water until it has completely dissolved
• Next, add the prawns and the mushrooms. Add the lime juice and simmer until all the ingredients have cooked through properly.
Serve your Tom Yam Soup in soup bowls and garnish with a handful of fresh coriander. Enjoy!
